The day Shah Darya was born

There are days that stay with you. Not because they were perfect on paper, but because they carry that distinctive flavor—the kind of moment when, deep down, you know you’re exactly where you’re meant to be.
On Friday, January 16, 2026, Jérôme and I met in a tasting laboratory to carry out one of the most delicious—and most serious—missions since the birth of Shah Prestige: selecting the four caviars that would embody the Shah Darya range.

Seven caviars on the table. Four spots to fill.

In front of us, seven exceptional references, carefully prepared. Baerii, two Oscietra with different profiles, an Imperial, a Kaluga, and to finish in style, two Beluga—one from China, the other from Iran.

The rules of the game were simple, but demanding: each selected caviar had to have its own identity, a distinct grain color, and a flavor unmistakable from the rest. No two references could be too similar. At Shah Darya, every caviar tells its own story.

We started at the beginning—the gentlest, most approachable flavors—and worked our way toward the most complex, the most intense. Each tasting followed tradition: caviar placed directly on the skin of the hand, at the base of the thumb, so the body’s natural warmth could release every aroma. No blinis, no accompaniments. Caviar, nothing but caviar.

A crescendo, caviar after caviar

The first tastings set the foundation. Baerii, elegant and approachable, charming without ever overwhelming. The two Oscietra—same species, but two very distinct personalities—left us both eager and thoughtful. Imperial, luminous, with almost unreal golden highlights, made an impression. Kaluga, meanwhile, carried us toward something deeper, more maritime, with remarkable length on the palate.

And then… the two Belugas.

The Beluga moment—or the anecdote that says it all

We first tasted the Beluga from China. And honestly—it’s very good. Truly. Grains of impeccable consistency, a steady, reliable taste, batch after batch. A top-quality caviar with no surprises, and that’s precisely its strength.

Then it was time for the Beluga from Iran.

And then… wow.

There’s no other word. The room seemed to pause for a second. That taste, that complexity, that length on the palate—it was on another level. Jérôme and I didn’t need to debate it. Neither of us hesitated for a single second. Our eyes met. The agreement was total—immediate, unanimous.

Iranian Beluga made it into the Shah Darya selection.

Yes, it’s rarer. Yes, its profile can vary slightly from one production to the next—that’s the very nature of this exceptional caviar, shaped by the unique conditions of Iranian waters. But that’s precisely what makes it something living, something authentic. And when the production is outstanding—like the one we were lucky enough to taste that day—the result is simply unforgettable. We fully embrace that kind of irregularity. It’s part of the product’s soul.

The final selection: four caviars, four worlds

Au terme de cette journée intense et joyeuse, les quatre élus de la gamme Shah Darya étaient désignés :
  • Oscietra Premium — olive-green grains with golden highlights, an elegant marine palette lifted by subtle nutty notes.
  • Tsar Imperial Gold — luminous golden grains, precious, born in the crystal-clear waters of a natural lake on the banks of the Amur.
  • Kaluga Signature — rare aromatic depth, smooth and lingering, the result of fifteen to twenty years of maturation.
  • Beluga Iran — the absolute jewel. A silky texture, buttery notes of rare complexity, a tasting experience of unforgettable nobility.

That Friday in January 2026 will remain for us far more than a work session. It was the moment Shah Darya truly came to life—not on paper, not in an Excel spreadsheet, but on the palate, with the conviction of three people around a table sharing the same standard: to offer only what is truly exceptional.
