Caviar pizza at Da Gennaro — when the champion meets the king of the seas
We told you that caviar didn’t need a formal setting to express itself. We thought we’d seen it all — the ski slopes, the mountain terrace, the Michelin-starred table. And then we went to Da Gennaro.
A French champion at the helm
Da Gennaro is no ordinary pizza maker. As the French acrobatic pizza champion, he masters his craft with a precision and passion that commands respect. When Jérôme, myself, and our friend Martial Blin suggested he revisit his pizza with Shah Darya caviar, he didn’t hesitate for long.
There were seven of us around the table for this historic first; a caviar pizza isn’t something you improvise, and it’s certainly not something you enjoy alone.
Two pizzas, two unexpected pairings
Da Gennaro got to work and imagined two creations specifically for the occasion.
The first: a white dough pizza with burrata and Oscietra Premium. The creamy sweetness of the burrata as a base, with the olive-green grains and golden highlights of the Oscietra adding their marine palette and subtle nutty notes on top. A pairing of surprising elegance and great finesse.
The second: a tomato sauce pizza with burrata and Kaluga Signature. This was a completely different story. The creamy sweetness of the burrata, the light acidity of the tomato, and the lingering depth of the Kaluga — three strong characters that could have clashed but instead balanced each other perfectly. One bite and you realize that certain pairings that would never have made sense on paper are perfectly obvious on the palate.



Da Gennaro’s reaction
What particularly touched us was Da Gennaro’s immediate enthusiasm. A champion used to excellence, tasting his own caviar creations and being won over from the very first bite, is a validation of rare sincerity. In fact, he announced that he wants to add Shah Darya caviar to his menu in the coming weeks.
